Yes, it’s finally Spring and I’m going to make Schaum Tortes for Easter dessert. What’s a Schaum Torte? It’s a delicious meringue shell that served with fruit, whip cream or even ice cream. I get lots of requests for these, so I thought I would share the recipe. Enjoy!
SCHAUM TORTE RECIPE
Ingredients
6 egg whites at room temperature
2 c. granulated sugar
1 tsp. cream of tartar
1 tbsp. vinegar
1 tsp. vanilla
Directions:
Preheat oven to 250 degrees. In large metal mixing bowl, beat room temperature egg whites until foamy.Add cream of tartar, vinegar and vanilla. Beat on medium speed until soft peaks form. Add sugar, 2 tablespoons at a time, beating on high speed until very stiff peaks form. Now you have two options on how to proceed. You can make 12 individual shells that are kind of like “nests” or you can make one large torte. The shells are crispy all the way through. The large torte is crispy on the outside and softer on the inside. Yum!
Individual Shells: Line two cookie sheets with parchment paper. Divide meringue into six even piles on each cookie sheet. Use the back of a spoon to push in the middle or “swirl” the spoon around the center to create pretty “nests”. Bake in the oven for 1 hour. Turn off oven, but leave shells in oven for one more hour.
Large Torte: Butter a 9 inch spring form pan. Spread the meringue evenly in the pan. Bake in oven for 1 hour. Turn off oven, but leave torte in oven for 1 more hour. Remove from pan. Top with fruit and cream. Cut like a cake and serve.
There are lots of options for how to serve the shells or tortes. Typically, it’s served up like strawberry shortcake – strawberries and whip cream. I’ve also served it with raspberries and ice cream, or even lemon pie filling and whip cream. You can store the shells for days in an airtight container.
